And I am so excited to share this super easy and very yummy recipe that I have decided to call Strawberry Brownies. They taste and have a texture like brownies, but I put them in cupcake liners to make them easier to serve when I made them for Easter. I saw a version of this recipe floating around for Valetine's Day and I thought I would take a shot at recreating them for a family get together. They were a definite crowd pleaser!
Easy Strawberry Brownies Recipe
What You Need:
- 1 box strawberry cake mix
- 2 large eggs
- 1/3 cup vegetable or canola oil
- 1 tsp. vanilla extract
For the Glaze:
- 3/4 cup powdered sugar
- 2 tbsp strawberry jam
- 1 1/2 tbsp milk
What You Do:
1. Preheat oven to 350 degrees F. Spray an 8x8 pan with nonstick spray or set up cupcake liners like I did. Set aside.
2. In a large bowl, mix strawberry cake mix, eggs, oil, and vanilla extract. Press into to prepared dish or cupcake liners. Bake for 18-22 minutes, until just done. Let cool completely.
3. In a small bowl, whisk together powdered sugar, strawberry jam, and milk. Spread over the cooled strawberry brownies.
