Instructions:
Start by preparing the raspberry filling. In a medium saucepan, whisk together cornstarch and sugar until there are no lumps. Add the water, raspberries, and lemon juice (if desired). Cook over medium heat, stirring frequently until the mixture thickens. Once thickened, remove from heat and allow the raspberry mixture to cool completely. Set aside.
2. Prepare the crust:
In a medium bowl, stir together melted butter, graham cracker crumbs, and sugar until well combined. Press this mixture into the bottom of a 9x13 baking dish to form a crust. Be sure to press it down firmly to ensure the crust holds together once chilled.
3. Make the cheesecake filling:
In a large bowl, beat together powdered sugar, cream cheese, milk, and vanilla extract until the mixture is smooth and creamy. Then, gently fold in the Cool Whip (or your homemade sweetened whipped cream). Carefully spread this cream cheese mixture on top of the graham cracker crust, making sure not to break it.
