Easy Slow Cooker Chicken Spaghetti Recipe

This recipe was originally published December 2, 2012! WOW! So much has changed since then for us. We have another child for one, and a lot has changed diet wise. I thought I would update it for a few reasons. You could make this slow cooker recipe in a crockpot or instant pot (which wasn't a thing in 2012). The original recipe called for Velveeta cheese and I thought I would share how to make that homemade. With the current climate and so many making recipes at home with canned goods, I thought I would share a better for you recipe made with items from your pantry instead of fresh from a fridge. 


The original version of this recipe was created to trick my daughter into eating her veggies by adding purees into it which you could still totally do, but I have found that you can do this with almost ANY recipe really. Making the cheese sauce for this homemade is better for you because it has less preservatives. If you want to make it easier, then you can definitely buy Velveeta block cheese and call it a day. You could also make this keto friendly and omit the spaghetti noodles, then just top it on zoodles. Yum!



What You'll Need:
- 12 oz. dry gluten-free spaghetti
- 1 lb. chicken breasts - uncooked, cubed
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 2 8 oz. cans tomato sauce
- 1/2 cup water
- salt & pepper, to taste
To Make The Cheese Sauce: Makes 2 Cups (or half a block of Velveeta)
- 8 ounces natural American cheese
- 4 ounces sharp Cheddar cheese
- 3/4 cup milk
- 1 teaspoon cumin powder

Here's What You Do:
1. Spray slow cooker with non-stick cooking spray or buy a disposable crockpot liner.

2. Combine all ingredients in slow cooker and stir well.

3. Cook on HIGH for 3 hours or LOW if you need to leave it all day. Stir again just before serving.




With the meat shortage, we have been buying all of our meat in bulk. I have been doing this for a while anyways just because I like to have a variety of things on hand so I can have options when cooking dinner (we have a deep freezer), but I also like to buy meat when it is at the cheapest price. But I was buying in bulk more recently because I would buy as many as I was allowed at a time to make sure I had it when it wasn't available - which happened a time or two.

This recipe is a favorite of mine and my family. My husband use to never eat "leftovers". I had to change what I called them to "meal prep" so he would eat them. But when I would make this slow cooker chicken spaghetti regularly, he never minded taking the left overs to work.

Since this was the first time I had made this recipe in YEARS, my son had never had it. When he heard it was called "Chicken Spaghetti", he got so excited. He loved it so much and gobbled it up!


If you make this as is, it makes about 8 servings for 466 calories. I do suggest forgoing the noodles and opting for topping on top of zoodles or even rice or even having with a side salad or fresh green veggies like broccoli. It could make it more like a sauce/dip that way though. But again, the idea was an option if you don't have fresh veggies on hand because you don't feel like venturing out into stores right now.

  1. This does sound super easy! Try having a child that rarely eats dinner at all. She's now 9! When she was 2-4 I'd tell myself one day when she gets bigger she'll do better. But it hasn't improved much yet.

  4. This recipe does sound good and especially nice when I can use my crock pot. I simply don't know how a person could live without a crock pot in their kitchen, as I use it constantly. My husband isn't too crazy about chicken, but he loves pasta, so I'll give it the ultimate test to see if it passes his inspection. Thanks for the review and recipe.

  8. I have using a crockpot for years. It saved me hours of cooking, especially When I came home from working all day! I only made stews, soups, roasts, meals like those. Once I found out that there were crockpots that had automatic shut offs, etc. I bought a new one. My favorite feature was lifting the container out of the crock!! I could serve the meals and clean it better! I would love to make this! I have never done it before. I pinned it. Yummy! I won’t even tell my hubby that it is a Keto dish! I'm amazed how good it came out, because I'm still learning to make things in the slow cooker and uncooked pasta ends up sticking and cheese seems to freeze into a hard ball. I do want to try this, it is worth having something not go right, it won't go to waste no matter!
