Cheesy Chicken Enchilada Recipe {Easy and Freezer Friendly}

Who doesn't need some homemade Mexican food in their life right now?! This Cheesy Chicken Enchilada Recipe is not only super easy to make and freezer friendly, but a HIT with my family!
This post was originally published on 3/5/13. I thought I would update it. This was originally for a review of MexAmerica tortillas, they had let me try out a variety of their tortillas. Their website is down and I haven't seen any current updates on their social media, so I thought I would re-do this post for y'all. My husband loves these enchiladas and they are so super easy. PLUS they are a hit with the kiddos too! You are definitely going to want to pin and re-pin again! :D
What you are going to need:
1 can cream of chicken soup
1/2 cup sour cream (about 4 oz.)
1 cup picante sauce (about 8 oz.)
2 tsp. chili powder
2 cups cooked chicken - chopped or shredded. You could use fresh, frozen, or canned
1/2 cup shredded Monterrey Jack cheese
8 tortillas - I am currently using xtreme wellness brand tortillas since they are lower in carbs.
1 small tomato, chopped
1 green onion, sliced
What you are going to do:
1. Pre-Heat oven to 350. Don't forget because you will be annoyed if you do.
2. Stir soup, sour cream, picante sauce, and chili powder in bowl.
3. Stir 1 cup soup mix, chicken, and cheese in LARGE bowl. It looks like it won't cover everything and you are going to need more. I used more chicken and still didn't need more. Just keep mixing until evenly spread throughout.
4. Divide chicken mix among tortillas. Roll up tortillas and place seam-side up in 2qt baking dish.
5. Bake at 350F for 30 minutes OR until enchiladas are hot AND bubbling. 5 minutes before I take them out completely, I like to add some more cheese on top.
6. Top with tomato and onion. As you can see I didn't have these.
7. ENJOY!
Serves 4 to 6. If you do four servings (which is two enchiladas each), then it is only 365 calories according to MyFitnessPal, but it is a VERY filling meal for sure! It is a little higher in sodium and carbs, but it does have 24 g of protein per serving. So depending on what type of diet you are on, just plan ahead for the rest of the day when you make this. I am all about balance when it comes to eating healthy through lifestyle changes.
Anyways there is my enchilada recipe. Please note mine look a little green because my husband had to buy spinach tortillas because Kroger was out of the other varieties right now. So we worked with what they had. Which is a basic of shelf cooking which if you follow me on Instagram, then you know I am all about and can teach you more. Hubby was so excited when I decided to make these. Homemade Mexican food is a go to right now since most of the restaurants are closed around us due to the current climate. I haven't made these in YEARS!
I like to make this in two batches at time. We eat one pan and then I spray aluminum foil, cover, and then put it in the freezer for a later date. You can either sit it out and let it defrost before baking or bake longer. But it makes a great freezer meal for sure. I am all about making future me's life easier.
