I recently received the Very Healthy Spiral Slicer from Varietyland to review and some Tuttorosso products, so I thought I would recreate this recipe. It was a little more complicated than I tend to cook, but I was able to do it. t was also a little on the pricey side, but so are healthier meal options. My picture looks NOTHING like the original, but this meal was still super yummy. Hubby wants to add it to our regular recipes...I said, "We'll see."
What You need:
3/4 pound Italian sausage, decased and crumbled
1 small sweet onion, diced
2 garlic cloves, minced
1/4 teaspoon red pepper flakes
1 (28 ounce) can Tuttorosso® No Salt Added Peeled Plum Italian Style Tomatoes
1 1/2 tablespoons Tuttorosso® Tomato Paste
1/4 cup beef broth
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf
Salt and black pepper to taste
4 cups kale, chopped
1 cup canned white beans, drained and rinsed
2 medium butternut squash
olive oil, to drizzle
fresh basil, to garnish
Parmesan cheese, to garnish
What to Do:
You can view the full recipe HERE. My husband attempted to use the Very Healthy Spiral Slicer by Varietyland to try and make the noodles out of butternut squash for this dish. It eventually worked, but we had to cut the butternut squash way down. I really should have tried one of the free recipes in the free e-book you get with every purchase of a Very Healthy Spiral Slicer.
I used the Very Healthy Spiral Slicer to recreate this recipe. Although I don't think it worked exactly the way it was intended, it still worked and made for a very yummy dish! I think the Very Healthy Spiral Slicer from Varietyland truly works best with veggies that are cylinder in shape, like carrots, zucchini, and cucumbers.
