Maple Pumpkin Spiced Muffins Inspired by Stranger Things + Netflix Giveaway

So have you heard the news? Stranger Things Season 2 is coming back exclusively on Netflix just in time for Halloween. My husband and I are huge fans of the series and are very excited for season two. And plus there is time for you to binge watch season 1 if you haven't yet or if you are in need of a refresher.


I decided to create these Maple Pumpkin Spiced Muffins with Mini Waffles because I was inspired by Eleven's love of the frozen breakfast item. I used a box mix that was originally for pancakes. So this recipe is super easy to recreate and my kids loved them.
How to make Maple Pumpkin Spiced Muffins:

What You Need:
2 cups pancake mix (I used this one)
2/3 cup milk
2 eggs
1/2 cup maple syrup

What You Do:
1. Preheat oven to 350. Mix together pancake mix, milk, eggs, and maple syrup.
2. Fill cupcake liners (or greased pan) 2/3 way full.
3. Bake for 15 minutes or until an inserted toothpick comes out clean.
4. I topped mine with whip cream and mini waffles. So easy and yummy!

    We only had netflix for a short time when my daughter got a gift card for her birthday. We loved it while we had it. This looks like and awesome show that my daughter and her best friend would really enjoy...I wouldn't mind watching it with them either it looks cute.

    I cannot wait for season 2 of Stranger Things this month! I love the creative Maple Pumpkin Spiced Muffins recipe above. It is perfect! It looks like popcorn which is perfect for binge watching Stranger Things. Pumpkin is the flavor of the season and of course it is inspired by Eleven's character on the show with the her love for Eggo waffles.

    As I sit in the office here on the computer my son is Netflix binging right now. I told him last night one more show and I went to bed. Woke this morning to find him sleeping on the couch. Apparently he watched until he fell asleep.
