Meal Prep Ideas to Help You Stay on Track

It's February, are you still focused on your New Year Resolutions? That's why I personally like making goals for myself. I feel like with a resolution, you fall of the wagon and don't see the point to get back on, but with goals, you keep trying the next day even if you lost focus for a day or two. And what has helped me in my weight loss journey is even if I had a bad day or even a week, is that I jumped back on the wagon and tried again. Just keep trying.


Meal Prep Ideas to Help You Stay on Track


For me, I had to focus on getting my nutrition right first. It took a lot of trial and error, but I finally figured out the main goal each day is planning ahead. We don't eat out like we use to at all and when we do go out to eat, we make better food choices for sure, if that means completely re-making a meal then that is what I do. I also believe meal prepping is more budget friendly as well. My husband use to say he hated left overs, but he basically didn't like having something for dinner and then having it for lunch the next day. But I had to change his mindset about his lunches so he could realize how much money we were wasting by eating out everyday. So sometimes I cook a dinner like I normally would and then make enough extras for him to have at least 3 to 4 days of lunches. That way he can switch it up if we do have leftovers for him to take.

So because we have been more focused on our nutrition and budget lately, I thought I would share some of our favorite meal prepping options, for breakfast, lunch, and dinner. My number one go to that I like to make for my husband's lunches is baked chicken with roasted broccoli and carrots. It is super easy to prepare because it's one pan and if you click the image below, you can see how I make super yummy and moist chicken.

Sourcing your food means you know what is in it, and also try to think about where your food comes from. If you're looking for South African fresh chicken, for example, start by researching where the nearest farms are. Next step is to check out the reviews of each farm that you come across. You'll get a good idea of which farms have good quality chicken.


Since my hubby has been basically having that one sheet dish for a few weeks, I recently started making burrito bowls for him again. You could make them with rice or cauliflower mash. We no longer make them with corn and you could also add avocado or hot sauce if you like. I received these 11 piece containers from Zoku and they have really helped our meal prep game.   1. I am guilty of getting off track lately with this pandemic. I need to meal prep. These Zoku containers look awesome I love how the lid locks in and they can be neatly stored.
