A fresh starter:

Apple Quinoa Lentil Salad

 Instructions

  1. Cook quinoa according to package directions, cutting cook time to between 8 and 10 minutes, to render a firmer grain. Drain, as necessary, fluff with fork and set aside.
  2. Cook French green lentils according to package directions, cutting cook time to between 10 to 15 minutes, to render a firmer lentil. Drain, as necessary, and set aside.

Note: test quinoa and lentils before pulling off heat and adjust cook time, as preferred, to achieve a firmer bite.

  1. Meanwhile, toast chopped walnuts in a skillet set over medium high heat, stirring intermittently.
  2. After about 2 minutes, drizzle nuts with maple syrup; stir consistently for approximately 1 more minute to coat nuts thoroughly. Remove from heat to cool.
  3. Whisk ingredients for vinaigrette in a large bowl.
  4. Add sliced apple to vinaigrette and mix well to coat (this helps keep apples bright). Add parsley and “cooled” maple-sweetened walnuts to bowl.
  5. Then add cooled quinoa and lentils. Mix salad thoroughly and season with salt and pepper.
  6. If desired, allow salad to sit in fridge for 15 to 20 minutes so flavors can mix and mingle.
  7. Plate salad with a topping of fresh arugula and serve.

Note: If you plan to store salad in fridge, keep arugula separate until ready to plate. Salad, without arugula mixed in, will keep nicely in fridge for 3 to 5 days.

For the main course:

Easter Ham with Apple Glaze

Instructions

  1. Preheat the oven to 300 degrees F.
  2. Place the ham in a large roasting pan, fat-side up. Optionally, you can score the fat. Press the cloves into the fat, spacing them evenly across the ham. Bake for two hours.
  3. Meanwhile, prepare the glaze. Place the apples, apple cider vinegar, and water in a large saucepan.
  4. Bring the liquid to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Cool briefly, then puree in a blender.
  5. Press the mixture gently through a fine mesh strainer to remove thicker pieces of pulp, so that what remains looks smoother and less like applesauce.
  6. Place the mixture in a medium saucepan along with the butter, brown sugar, cinnamon and ground cloves.
  7. Bring to a simmer and cook over low heat, stirring periodically, for 15-20 minutes to bring the flavors together.
  8. After the ham has cooked for 2 hours, pour the apple glaze over it and continue to cook for another hour to 1 1/2 hours, basting every 30 minutes.
  9. For the last 30 minutes, slice the remaining 3 Fuji apples and spread them around the bottom of the roasting pan, coating them with the apple glaze. Let rest 10 minutes or more before carving.

2024, Less Alcohol & More Wellness Mocktails

Let 2024 be the year that you get control of your drinking. Doing research on my mother and her alcoholism, lead me down a rabbit hole of realizing that I didn't really have control over my own drinking. Did you know if you consume more than 10 drinks for men or 7 for women in a week then you are classified as an alcoholic in the medical community? It is really a low bar for some, but is it? Some say they like to have a glass of wine to wind down at night. But is it actually a glass? Because a glass of wine is only 5 ounces. My sober life all started with my journey through Dry January. And what helped me was finding alternatives. These wellness mocktails I found will really help you on your sobriety journey.

Best Air Fryer for Feeding Large Groups | SURPRISED ME

Air fryers have taken the culinary world by storm and for a good reason. The biggest advantage of an air fryer is its compact size, fast cooking speed, and relative healthiness.

There are times when its usefulness diminishes significantly when you're hosting a party, family gathering, or simply have a large group of hungry guests to feed, a standard-sized air fryer may not cut it. That's where a large air fryer shines.

My New XL Air Fryer Stands Out!

Recently I purchased a new fancy and large air fryer to help me out, it is called Typhur Dome Air Fryer, which can handle more food in a single layer (e.g. 32 chicken wings, 12-inch pizza), saving my time and ensuring everyone gets their crispy favorites without delay.

The Science Of Tender Meat And How It Actually Works

Tender meat is something everyone wants, but very few people get it. Most of us wind up with a tough pork chop that has the same texture as an old leather hiking boot from the 1970s.

The Science Of Tender Meat And How It Actually Works

The problem is our collective misunderstanding of the science of tender meat. Most amateurs get it totally wrong.

Fortunately, this post is here to help. We ask what makes meat tender and how you can achieve it. Learn all the tips and tricks you need right here.

High Protein Appetizers to Serve at a Dinner Party

There are numerous reasons to serve high-protein appetizers at your next dinner party. You may need to keep your guests happy and free of hunger pains if serving a buffet dinner or if several guests have delayed arrivals. Or you may simply want to opt for choices that are healthier than appetizers high in sugar or carbohydrates. Sugary foods tend to leave us craving more food which can lead to filling up on the appetizers before your dinner party advances to the main course.

High Protein Appetizers to Serve at a Dinner Party

Appetizers high in protein promote a feeling of being satiated, stabilizing blood sugar levels, slowing digestion, and reducing appetite. Better still, there are high protein appetizers for everyone’s dietary preferences including the meat and fish lovers among us, as well as treats specially designed for vegans or vegetarian guests.

Pineapple Chicken {Easy Crock Pot Dump Meal}

With my daughter practicing almost every day after school for her play, my son in sports, between my husband's chaotic work schedule, nannying for my niece and nephew a few days a week, and church activities...some days I just don't have time to cook! We are working off paying off debt this year which means less traveling than I would like and more cooking at home than I want. But jokes aside, cooking at home is really so much cheaper than going out these days especially with rising inflation prices.

My husband randomly bought a few pineapples because it was on sale, thus why I usually do the grocery shopping. He kept saying he would cut it so we could have fresh fruit available, but of course he never got around to it. But I absolutely despise food waste. So, I decided to take my hand at pineapple chicken. And because there were two pineapples, I made one for now and one for later in an easy freezer-friendly safe bag.

Fruit Punch Infused Cupcakes Perfect for Valentine's Day

I first created this recipe (and took these pictures) back in 2018 for a campaign with Tampico. They decided they liked my fruit punch infused popsicles better, but I was checking out timehop and decided to share this recipe that's perfect for Valentine's Day because it was such a hit in our house. I threw a little get together for my husband's birthday and these cupcakes were enjoyed so much that a few friends asked for the recipe. But the best part? It is SO super easy to recreate!

I recently was sent an awesome box from Wildgrain that was full of artisanal breads, pastas, and pastries. Definitely was a crowd pleaser. We brought none home, which is a win in my book. My mother-in-law also asked me to make it for our annual Christmas Eve get-together. Personally, I think it would be great at a New Year's Eve Party as well.

Breakfast Tater Tot Casserole with Southside Market Sausage

We are back-to-school in our house. I have been trying to come up with not only breakfast recipes that I can make easily on weekend mornings, but also meal prep breakfast ideas as well as breakfast for dinner. Yes, I have been looking for all the breakfast ideas. And that is when I saw Breakfast Casserole and Tater Tot Casserole. Then I thought I could make a mash up of this. So here we have Breakfast Tater Tot Casserole with Sausage and of course I used our Southside Market Original Fresh Rope Sausage because it has great spicy flavor, and it is so easy to work with.

Crock Pot Tenderloin Recipe {Easy Family Dinner Idea}

We used venison for this recipe because my husband goes hunting for a hobby, but you could even use pork or other types of tenderloin. I prefer deer meat because this recipe cuts out the "gamey" taste if there is any. Plus, with inflation at an all-time high and my husband having all the necessary stuff for hunting, using deer meat just makes financial sense for us. But I realize it isn't for everyone.

Crockpot Chop Steak {Easy Family Dinner Idea}

My husband is a hunter so we used deer chop steak for this recipe, but you could use any chop steak. I love a good crockpot, slow cooker recipe during the cooler fall months. And this one is so super easy and such a crowd pleaser. I have added some links to the seasoning packets I use, if you want to skip the preservatives and make your own.
